Known as the fifth core taste (added in 2002 alongside sweet, sour, bitter and salty), Umami is a Japanese term that literally translates as delicious ("umai") taste ("mi"), simplified in English as simply "savoriness". Umami has a mild but lasting aftertaste associated with salivation and a sensation of furriness on the tongue, stimulating the throat, the roof and the back of the mouth. And it is super addictive!
