Rice Paper Noodles

Create a noodle dish without even turning on the stove!

We’re obsessed with the chewy, thin noodle texture in this easy recipe. 
Pair it with our Shiitake Mushroom & Edamame dumplings for plant-based
or go for our Chicken & Prawn dumplings to complete your meal.

SERVES 1

INGREDIENTS

  • Rice paper - 6 pieces of rice paper
  • Boiling hot water - enough to hydrate
  • Curious Elephant Chinese Chilli Oil
  • 3 Tbsp of neutral oil - we opted for sunflower oil 
  • Splash of oil for the noodle soaking 
  • 1 clove garlic crushed 
  • 1 tbsp Chinese black vinegar (do not substitute with balsamic vinegar) 
  • 2 tbsp Soy sauce 
  • 1 tbsp toasted sesame seeds 
  • Chopped peanuts as garnish 
  • Chopped spring onions and coriander

PREPARATION

  1. Cut the rice paper into strips using scissors
  2. Pour hot water into a bowl and add a splash of oil to prevent the noodles from sticking - mix well
  3. Soak the rice paper strips in the hot water for 1–2 minutes until they become soft
  4. In a separate serving bowl, combine chopped spring onions, fresh coriander, toasted sesame seeds, and 1 crushed clove of garlic
  5. Pour hot oil over the fresh aromatics to release their flavours
  6. Add the softened noodles to the bowl, along with Chinese Chilli Oil, peanuts, toasted sesame seeds, soy sauce, and black vinegar
  7. Mix everything together well, and enjoy your delicious noodle dish!
