Rice Paper Noodles

Create a noodle dish without even turning on the stove!

INGREDIENTS
- Rice paper - 6 pieces of rice paper
- Boiling hot water - enough to hydrate
- Curious Elephant Chinese Chilli Oil
- 3 Tbsp of neutral oil - we opted for sunflower oil
- Splash of oil for the noodle soaking
- 1 clove garlic crushed
- 1 tbsp Chinese black vinegar (do not substitute with balsamic vinegar)
- 2 tbsp Soy sauce
- 1 tbsp toasted sesame seeds
- Chopped peanuts as garnish
- Chopped spring onions and coriander
PREPARATION
- Cut the rice paper into strips using scissors
- Pour hot water into a bowl and add a splash of oil to prevent the noodles from sticking - mix well
- Soak the rice paper strips in the hot water for 1–2 minutes until they become soft
- In a separate serving bowl, combine chopped spring onions, fresh coriander, toasted sesame seeds, and 1 crushed clove of garlic
- Pour hot oil over the fresh aromatics to release their flavours
- Add the softened noodles to the bowl, along with Chinese Chilli Oil, peanuts, toasted sesame seeds, soy sauce, and black vinegar
- Mix everything together well, and enjoy your delicious noodle dish!
