Spicy Scissors-Cut Noodles

If you love Biang Biang spicy noodles then you’ll love this one! We’ve made it easier for you to cut the dough with scissors rather than hand pulling and stretching the noodles. We’ve taken inspiration from Red House Spice’s recipe, but our Chinese Chilli Oil takes it to the next level! This is a flavourful vegan dish made with just a few ingredients and can be served with our range of dumplings and some greens on the side.

Serves 2

INGREDIENTS 

Noodles

  • 300 grams all purpose flour (protein content 11% - 13%)
  • 150 grams room temperature water
  • ½ tsp salt
  • Oil for brushing

Noodle Seasoning

  • 2.5 tbsp of neutral oil
  • 2 sprigs of spring onion finely sliced
  • 1 tsp minced garlic
  • 1 tbsp soy sauce
  • 1 tbsp black vinegar 
  • 1 tbsp toasted sesame
  • 1 - 2 tbsp Curious Elephant Chinese Chilli Oil

Greens

  • 1 large bunch bok choy

PREPARATION

Making The Dough

  1. Combine your flour and salt together in a bowl. Add your water gradually and mix together. Knead it for 2 -3 minutes until a dough ball forms 
  2. Cover the dough in cling film and let it rest for 30 minutes
  3. Unwrap the dough and knead again
  4. Stretch the dough out to a log and brush it over with a light coat neutral oil

Cooking The Noodles

  1. Bring a pot of water to boil, enough to cook the noodles in a medium to large pot
  2. Hold the dough with one hand and cut the noodles with the other hand into the pot of gentle simmer water. Repeat until all the dough is cut
  3. Allow a further 2 minutes to boil and the cooked noodles will begin to float. Cooking time may vary depending on the size of your cut noodles. Add your bok choy and cook for 20 seconds until they’re slightly done
  4. Drain your noodles and bok choy and assemble in a bowl (You do not need to rinse the noodles under running water)
  5. Add chopped spring onions, minced garlic on top of the noodles
  6.  In a small pot, heat your 2.5 tbsp neutral oil until the oil starts to sizzle and smoke, then pour the hot oil over the spring onions and garlic. It will sizzle and immediately become fragrant
  7.  Add your soy sauce, black vinegar, chinese chilli oil and toasted sesame seeds
  8.  Mix well and enjoy with a side of pan fried dumplings
